Bún chả – pork flank with rice noodles and herbs
A lighter, homemade version of Vietnamese bún chả. Marinated pork belly adds full flavor and quality fats, rice noodles are naturally gluten-free, and fresh vegetables and herbs lighten the meal. The sweet and sour dressing supports digestion and balances the fat content of the meat.

Ingredients
for 4 servings
- Meat:
- 500 g Pork flank
- 1 spoon Rice vinegar (či jablečný)
- 1 spoon Coconut sugar
- 1 teaspoon Salt
- 2 cloves Grated garlic
- 2 cm Grated ginger
- 0.5 teaspoon Coriander
- Noodles and vegetables:
- 150 g Rice noodle
- 1 pc Sweet potato – optional
- 4 handfuls Salad
- 2 pc Cucumber
- 1 handful Herbs (mint, coriander)
- Dressing:
- 9 spoons Water
- 3 teaspoons Apple cider vinegar
- 1.5 spoon Sweetener (honey, maple syrup)
- 1.5 teaspoon Grated ginger
Method
Marinate the meat: Clean the meat and cut it into slices or larger cubes. In a bowl, mix the vinegar, sugar/syrup, garlic, ginger, salt and spices. Cover the meat in the marinade thoroughly and let it sit for at least 30 minutes, ideally overnight in the refrigerator.
Meat preparation: Baking: Place the meat in a baking dish, cover and bake at 160°C for 45-60 minutes, then uncover and bake briefly until crispy. Or pan: Sear first in a dry pan, skin side down, then turn, add the marinade and caramelize.
Noodles and vegetables: Prepare rice noodles according to package directions. Grate sweet potato, tear lettuce, slice cucumber, and chop herbs.
Dressing: Mix all the ingredients for the dressing and taste – it should be slightly sweet and sour.
Serving: Place noodles, vegetables, meat in bowls and pour dressing over. Serve immediately.
