Broth

Properly prepared broth is one of the basic pillars of supporting digestion, the intestinal mucosa and the microbiome. Thanks to the content of minerals, amino acids, gelatin and collagen, it helps in healing leaky gut and can significantly support the treatment of eczema and allergies. However, the length of cooking and the right choice of ingredients are important, especially in cases of histamine overload.

Ingredients

for 4 servings

  • 1 serving Poultry (skelet, stehno, křídla, krk, pařáty) – optional
  • 1 serving Rabbit (thighs, back, whole, head) – optional
  • 1 serving Beef / pork / lamb / venison (ribs, neck, tail, meat with bone, gizzard) – optional
  • 1 servings Fish (hlava, vnitřnosti) – optional

Method

  1. The broth naturally contains minerals (calcium, magnesium, phosphorus, potassium, sodium), amino acids (glycine, proline, glutamine) and, when cooked for a longer period, gelatin and collagen. These substances support the regeneration of the intestinal mucosa, nourish the microbiome and help reduce inflammation in the body.

  2. In case of eczema, allergies or confirmed histamine intolerance, the length of cooking is crucial. The longer the broth is simmered, the more histamine it may contain. In case of histamine intolerance, it is always advisable to choose short-cooked broths. The cooking time can be gradually increased according to tolerance and improvement of symptoms (if the body is not so burdened with histamine).

  3. Poultry stock (chicken, turkey, goose, duck): 2 hours Rabbit stock: 2 hours Pork, lamb, beef, venison: 4 hours Fish stock: 1 hour

  4. At the beginning, it is advisable to prepare broth only from meat, then from bones and only after good tolerance, add vegetables.

  5. Properly prepared broth is suitable from the beginning of solid foods. It supports the maturation of digestion, the immune system and can help reduce the risk of developing eczema and allergies at an early age.

  6. Place the meat in a pot, cover with cold water, bring to the boil and then reduce to a gentle simmer. Cook according to the type of meat, lightly salt towards the end, drain and serve or freeze after cooling.
